Easy, Healthy and Quick Cauliflower Fried Rice

Crunchy Cauliflower is often overshadowed by its powerful green cousin broccoli. Yes, it’s a white food, but one white food I highly recommend for optimal health and weight loss. This delicious veggie helps to powerfully fight cancer with its active component sulphoraphane, is an anti-inflammatory giant, is rich in phytonutrients galore, boosts brain health, helps with detox, and as an added benefit.. cauliflower is a non-starchy veggie that will help you lose weight. 

TIP:  Not a fried rice lover but love the creamy consistency of mashed potatoes? Steam a head of cauliflower and mash it with garlic salt, a sprinkling of grated Parmesan cheese and a touch of butter.  A healthy, lean life can be delicious and easy.

CAULIFLOWER FRIED RICE

Ingredients

1 head of organic cauliflower, stem removed
½ red or yellow onion, minced
3 garlic cloves, minced
2 tablespoons fresh basil or parsley, diced
Coconut oil for cooking
1 whole egg
2 tablespoons coconut flour
1 teaspoon sea salt
Black pepper to taste

Optional:  1/4 cup green peas, 1/4 cup red bell pepper or 1/4 cup diced carrots

Directions
Steam cauliflower just until softened and put in a bowl. Using a potato masher or food processor, mash the cauliflower down to the consistency of rice.
In a large mixing bowl, add rest of ingredients.
Combine ingredients from the two bowls and mix.
Heat 3-4 tablespoons coconut oil in a skillet over medium heat. Then, pour mixture into skillet. (Coconut oil has a high smoke point. Other  oils such as olive oil will start smoking at a low temperature, creating an unhealthy, inflammatory oil.
Sitr-fry mixture for 7-10 minutes.  Enjoy!
